Homemade cheese

Check out this nice little spread.  Malbec, apples, fresh cheese.

We made our first batch of raw goat milk cheese tonight.  Recipe: approx 3 cups milk, just shy of 1/4 cup lemon juice, 2 cloves garlic, salt to taste, fresh chopped basil.  The process was pretty easy: heat goat milk to 180 degrees, remove from heat and add lemon juice to curdle, ladle through cheese cloth in a strainer, hang cheese cloth til it all dries, remove cheese, add spices.  It turned out a little dry and strong on the lemon/garlic, but still pretty damn tasty.  Next time I think we’re going to try a different herb and maybe a little less drying time with the cheese cloth.  Tips are welcome.
